Fake French Toast

Ingredients

2 eggs

4 T ricotta (or cream cheese)

dash cinnamon and nutmeg

2 pkt Splenda

Heat frying pan. Mix all ingredients together. Melt some butter in small frying pan and pour batter in, spreading a little. Brown on one side, and flip, and brown other side.

Serves 1 big eater @ 4 carbs

This tasted more like a pancake than French toast, but was great, especially with maple syrup. if it's difficult to flip, cut the pancake in half.

Luscious Ricotta Pancakes

Ingredients

3 eggs

1 cup cottage or ricotta cheese

1/4 cup soy protein isolate

dash salt

little water

Beat eggs well. Add cottage cheese and beat. Add soy powder and salt. Mix well. Stir in a little water, so the batter is not quite so thick. Heat oil in a frying pan, and when hot, spoon pancake batter in. Spread it around a little so pancakes are not too thick. When bubbly on top, turn, and cook until bottoms are done.

Serves 2 @ 5 carb each

Sausage and Egg “Muffin”

Ingredients

6 oz Ital. sausage

6 eggs

1/8 cup heavy cream

3 oz cheese

OPTIONAL: salsa, bacon, onion

Preheat oven 350. Spray 3 super large muffin tins with PAM. Cut up links and put two in bottom of each tin. Mix eggs and cream and salt & pepper. Pour some in each tin. Sprinkle with half the cheese. Pour remaining egg mixture in and sprinkle with rest of cheese. Bake about 20 min.(time may vary) until eggs are done and golden. Remove from oven and let sit few minutes. Use spoon to remove "muffins".

Serves 3 @ 2.3 carbs

W/O Sausage: 3 @ 1.6 carb

These puffed up about 2" and were really tasty

Fake French Toast II

Ingredients

2 eggs

dash cream, dash water

dash cinnamon

1 pkt Splenda

1 oz pork rinds (about 1/2 2.25 oz pkg)

Beat all ingredients except rinds. Crumble rinds and let soak in egg mixture until thick gloppy batter. Heat butter in frying pan, and pour in batter, spreading around pan. Fry until brown on one side, flip and brown other side. Serve with maple syrup.
Serves 1 @ 2.3 carbs

This was pretty good, but if you hate pork rinds, don't try it. The flavor is not real strong, but it's there.

Almond Vanilla Pancakes

Ingredients

5 Tbsp. almond flour (you could also use other nut flours or even soy flour

1 Tbsp. sour cream

1 Tbsp.water

1 egg

1/2 tsp. baking powder

couple of pinches Splenda

1 Tbsp of Vanilla Syrup

2 Tbsp. Oil

Mix all the above together. If the consistency is too thick for your personal taste, splash on a bit more Vanilla Syrup. Pour on nonstick griddle surface (spray spatula with Pam, because they can be a bit difficult to turn). Recipe makes 2 large pancakes. You can use butter or maple syrup on them.

1. Use Your Blender: It can help you chop and dice particular ingredients in a short amount of time. It is generally smaller and easier to clean than the food processor. So if you need some shredded cheese, bread crumbs or finely grated veggies for a recipe consider using your blender.

2. Try a Food Processor: It can chop onions and mix bread dough in a hurry. It can also mix up cookie dough and shred lettuce for a salad. I use my food processor when I have a big job ahead of me. For example when I come home from the grocery store and would like to pre-chop all of my onions for the freezer, the food processor can do the job in no time.

3. Freezer. Use that freezer for more than just ice cream. Prep often used vegetables such as celery (blanch first) and onions for quick additions to any meal and keep them handy in the freezer. Keep family favorite meals at the ready for busy or just plain exhausting days when you have no time to cook. Have some extras like freeze and slice cookie dough and frozen pizza dough for emergencies.

4. Double Your Dinners: When you cook a favorite meal consider doubling the recipe and freeze the second half for a future meal. Don’t have to do this for every meal but just freezing one a week can be a real bonus.

5. Make Quick Side dishes: Side dishes don’t have to be time consuming. Quick starches such as couscous and pasta can be prepared in minutes and go well with main courses that already have a sauce such as stews and gravies. Fresh vegetables such as broccoli and corn only take a little steaming and are ready for consumption.

6. Homemade Mixes: Make mixes for quick breakfasts or even desserts. Quick cookie mixes and baking mixes can make a multitude of last minute recipes.

7. Meal Planning: Planning your meals in advance can alleviate the dinner, and even the breakfast and lunchtime stresses. Looking over the next day’s meals the night before will assure that you are well prepared to get meals on the table in record time.

8. Think Ahead: Have a well stocked pantry. Don’t be caught without basic ingredients. Make a list of the regular staples you use to make your favorite meals and always make sure to have them in stock. If space and funds permit when you purchase your staples buy two to start and replace one each time you open a new one.

9. The Trusty Crock Pot: Use that crock-pot. If you have one gathering dust somewhere pull it out! If not go get one. On days you know you will be too busy to think some meat and vegetables and the crock-pot can have dinner ready whenever you are.

10. Learn a New Skill. If you find a particular skill such as cutting vegetables, making pie dough or what have you seems extra tedious to you try and find new and better ways to complete the task. Do a little research, watch a video, or check out a book you might be surprised at what you discover.

Antioxidants, are nutrients that are responsible from protecting your body's cells from being destroyed by toxins. This destruction has been linked to an increased risk of certain medical conditions, such as cancer, heart disease and others.

Antioxidants are found in the good stuff that our mothers made us eat when we were little, namely fruits & veggies. Amazingly, many of us didn't listen and took up coffee instead because more Americans get their daily dose of antioxidants from coffee than from broccoli!

Small, niche businesses can use blogs to build customer loyalty and create new sales opportunities, particularly when their product has broad appeal. Few products capture the public’s imagination more than chocolate.

For candy makers currently outside the “blogosphere,” here is how the conversation might go when a chocolatier - we’ll call it the Sweet Chocolate Company - considers launching a blog.

Mrs. Sweet: “Everybody seems to have a blog these days. I’ve done some research, and I think we should go for it!”

Mr. Sweet: “You do? Our budget is pretty well tapped out with our e-commerce Web site, pay-per-click advertising and paper and electronic newsletters.”

Mrs. Sweet: “True, but a blog is an inexpensive way to improve our Web site traffic. And a blog will bring us more repeat orders, referrals and new customers.”

Mr. Sweet: “How does a blog improve Web site traffic?”

Mrs. Sweet: “Because a blog is loaded with fresh content, it boosts our site’s rankings on the search engines. That means more customers will find us online, even when competitors have larger pay-per-click budgets.”

Mr. Sweet: “Sounds like it’s worth a try. I like the fact we can start without a major investment. Plus, we can monitor results by looking at subscriptions, comments and new customers. You’ll do the writing?”

Mrs. Sweet: “Absolutely – with a lot of help from our customers, of course!”

Sweet Chocolate is off to a great start. They did their research, articulated a theme, built a consensus, prepared a marketing plan, assigned responsibility for the project and decided how to evaluate results.

Follow their lead and a successful blog will be no “truffle” at all!
